The Flavors of Galliford’s Winter Menu
After a restful winter holiday and alongside the new year, Galliford’s has brought a new winter-themed menu curated by the restaurant’s executive chef, Derek Tebeau.
Galliford’s proudly features a rotating menu, with new arrivals aligning with the coming of new seasons. Chef Derek carefully curates each seasonal menu based on the restaurant’s New England home-style food and the common tastes of each season. For the new menu, that includes the flavors of winter root vegetables such as potatoes and carrots, and warm herbs such as rosemary and sage.
When asked to describe the flavors of winter, Derek describes it as reminiscent of the warm and fuzzy feelings you get from a warm blanket on a cold day. Something that tastes like home. These feelings are what inspired him to develop the winter menu offerings.
Winter Menu Highlights
Among the new winter selections, you can find “heavier” dishes such as the Winter Gnocchi; a colorful, root vegetable-based meal dressed with an aromatic sage cream sauce. Another stand-out is the Hot Belly Ramen; a warm, hearty broth bowl available in both regular and spicy. The Hot Belly Ramen is a savory twist on an Asian-classic, showcasing the restaurant’s taste for both New England foods and beyond.
Derek describes seafood dishes as one of the more popular selections at Galliford’s, which inspired him to create the Cape Cod Reuben, a unique twist on a traditional sandwich. Rather than corned beef, it features a fried local haddock as well as coleslaw and tartar sauce instead of sauerkraut and thousand island, all between a reverse-toasted brioche in place of rye.
Familiar Favorites for the Season
Although there are plenty of new selections, some fan favorites carried over the new menu, such as Galliford’s classic “Better Than Mom’s” Meatloaf, a must-try dish that will both fill you up, and spark a sense of home.
Beyond the Menu: Weekend Specials
Aside from the menu, there’s still always something new to try at Galliford’s, and Chef Derek creates each weekend’s specials to fall in line with the season, elevate fan favorites and existing dishes, and bring in new creations.
Chef’s Winter Picks
When asked about what his perfect meal from the new menu would be, Chef Derek selected:
- The Sticky Bun Old Fashioned to drink, a cinnamon-infused version of a regular favorite
- The Stuffed Mushrooms to start, a specially-prepared take on a classic dish that you won’t find like it anywhere else
- And the Parisian Onion Sirloin as the main course, a delicious 14oz sirloin finished with a french onion demi-glace and paired with hearty bacon mashed potatoes and grilled asparagus
